Slow Cooker Ribs
The secret to the level of deliciousness in these ribs is a good GOOD kick of garlic in our marinade. Usually, the oven is our best friend when craving and cooking oven baked ribs, but the Slow Cooker has become my favourite kitchen tool in our chaotic life. Move over oven…
The best part about Slow Cooker Barbecue Ribs is that they fit for any time…any season. Slow coking ribs breaks down the connective tissue in the meat making them fall-apart, tender. Brushing with a delicious barbecue sauce glaze with a kick of garlic and Cayenne (optional), then broiled for an extra 2 minutes until bubbling, charred and crispy on the tops and edges ensures the best ribs you will try.
Ribs Recipe
The ribs are not only smothered in sauce while they are slow cooking, they are coated in sauce a second time before going under the broiler (or grill) to create the stickiest glaze while charring the edges. I love pouring all of the juices from the slow cooker bowl into the remaining sauce to give them even more flavour!
Sauce Ingredients:
- Barbecue sauce
- Worcestershire sauce
- Garlic
- Brown sugar
- Cayenne — an optional ingredient if you like a nice kick of heat!
Mix all the ingredients together and brush all over the meat.
How To Cook Ribs In a Slow Cooker
In this recipe I am providing different cook times depending on the results you are looking for.
LOW: 7 HOURS / HIGH: 3 HOURS — Ribs that are soft but stay on the bone (as shown in the video below).
LOW: 9 HOURS / HIGH: 4-5 HOURS — Tender, fall apart in your hands ribs that melt in your mouth like butter (as shown in the image below).
Place your ribs on the bowl of a 6-qt slow cooker bowl, pour the sauce all over to evenly coat and let the slow cooker do all the cooking for you. Once they are done, transfer ribs to an oven tray, baste with more sauce/juices mixture and broil (grill) for 5-10 minutes until charred on the edges and bubbling!
How To Remove Membrane From Ribs Before Cooking
Before cooking, I recommend removing the membrane from the back of the ribs. It’s not essential to do this, but I find the sauce is better absorbed into the meat when removed.
At one end of the rack, slide a fork or a blunt knife under the membrane and over a bone. Lift the membrane away off of the bone until it begins to tear Use a paper towel to grab hold of the edge of the membrane and pull it off. It may come off in one piece or it may tear into smaller pieces. (See video BELOW.)

Slow Cooker Barbecue Ribs
Ingredients
- 2 cups (500ml) barbecue sauce
- 2 tablespoons brown sugar
- 3 tablespoons minced garlic
- 2 teaspoons Worcestershire sauce
- 1 tablespoon cayenne pepper (optional for a hint of spice)
- 2 kg (4 pounds) baby back pork ribs
- Salt , to taste
Instructions
- Spray inside of a 6-quart slow cooker with cooking spray.
- Remove inner skin (membrane) from ribs and place ribs in slow cooker. Discard skin.
- Combine bbq sauce, brown sugar, garlic, Worcestershire sauce and cayenne pepper in a small bowl. Mix well to combine and completely cover with half of the sauce.
- Season with a good amount of salt and pepper; cover with lid and cook on low setting for 7-9 hours or high setting for 3-5 hours *see notes. Refrigerate remaining sauce to use later.
- When ribs are tender and falling apart, transfer onto an oven tray (or baking sheet), lined with parchment paper. (Lift them carefully as the meat will be very tender and falling off the bone).
- Pour half of the juices from the slow cooker bowl into the remaining sauce. Baste ribs with half of the sauce and broil (grill) in preheated oven at 400°F (220°C) for about 10 minutes or until beginning to char and crisp on the edges.
- Serve ribs with remaining sauce.

Yes! Foil is fine to use! Just brush the foil with a little cooking oil to prevent them from sticking 🙂

I added one shredded apple just for sweetness and because it fits to pork meat. The times mentioned really did the trick. For a next time I think I will marianate the meat in the sauce, maybe a night but certainly a couple of hours to get a more intense flavor. I was a little hesitant on the salt and -epper but it can have quite a bit. All in all went three full slabs down in 10 minutes with three people digging in. Excellent recipe, which I will certainly share.

First time I had a crack at making ribs. Being winter down under at the moment I thought I’d use the slow cooker. 2.1 kg of ribs. 2 hrs on high. 3 hrs on low. Didn’t add Cayenne Pepper because I used some Sweet Baby Rays Kickin Bourbon Sauce and Marinade but I think it needed a bit more spice. I will definitely try the Cayenne Pepper next time. I have 3 teenage sons and all the ribs were cleaned up. I thought I would have some leftovers as there was only 5 of us and we had plenty of mash and veggies but I guess the ribs were too good!

I will give these ten stars if I could. Made these for Sunday dinner as I am always looking for something new to break up the monotony. Man oh man, they were amazing. My husband and I loved these slow cooker ribs we had for dinner tonight! I used beef ribs and my Nana’s bbq sauce. My modifications were using 1 tbsp of minced garlic and 1/4 tsp of cayenne pepper flakes.
My Nana’s bbq sauce:

Back in the 1950’s my mom made the ribs in the oven. I did this also always had fall off the bone ribs. But the one she did was before putting the ribs in a large pot/pan she put them under a broiler to take off the membrane. It worked every time no pulling off the membrane & the broiling seared the back of the ribs also. Haven’t made in slow cooker but I will using Sweet Baby Ray’s BBQ Sauce & the broiler to remove membrane. They look so very good just like the oven baking.

This was a great recipe. I used less minced garlic, added a whole clove of garlic and half a spanish onion. While we were waiting for the ribs in the oven, we used some of the leftover BBQ sauce to dip with bread. After smelling the ribs cooking all day we gave in to temptation. Next time I’ll add some mini potatoes and more onion. The only trouble is my eyes and my stomach kept sending different messages on how much to eat!

I have a question. How old is your slow cooker? I bought a new one a few years back and nothing cooks right in it. Everything turns out dry. Then I read online that companies have raised the temp of crockpots for food safety reasons. I don’t know if all the brands do that now but even on low my crockpot cooks too quickly. Has anyone else had this issue?

I have not tried this recipe yet, but it sounds awesome! Only question I have is there a particular brand of BBQ sauce that you use. With the brown sugar/garlic/Worcestershire sauce… should I use a “plain bbq sauce” or would it be ok to use a “honey or brown sugar” sauce. I normally use a sauce with bourbon or brown sugar when I do my ribs.

Sounds relish. Will try. Just to clarify please, when someone says “grill/broil”, I turn on the broiler element. I fell in love all over again with my slow cooker I forgot how juicier and tender slow cooking makes your
meal taste. I try this recipe before because of the added spice and it was amazing every piece of meat did fell off the bone. I did it again this time I also added with my ribs chicken legs and I was not disappointed
I used Diana original BBQ sauce and I added a tablespoon of my hot sauce for an extra kick so good

Made these for the first time using my new slow cooker and they were delish. So easy to do. Made up the sauce, popped into slow cooker and poured over sauce. Left to cook on low for about 8 hours. Transferred to baking tray covered with parchment and smothered with left over sauce and put into oven to cook for 15 mins. Just fell off the bone and so tasty, especially as I had more left over sauce to heat up and pour over those succulent ribs ?

Should the ribs be thawed or can they be frozen?

Always thaw the ribs (or any meat for that matter) before cooking in a slow cooker.

Another great recipe Karina. I made these last night. I used boneless pork ribs because the store was out of baby back ribs. I was surprised at that because I live in Austin,Tx and Texans love to bbq. Shouldn’t have been surprised I guess. Anyway using boneless pork ribs still worked well, and even better the day after. By the way, I am an Australian living in Texas. Think i’ll try your Barbados tacos next?
